Our range is narrow because quality requires focus. The stockfish is dried outdoors on racks, matures slowly and is graded fish by fish. This craft is the foundation for both the lutefisk we supply to foodservice and grocery retail in Norway, and our stockfish exports to Italy.

Lutefisk from Brødrene Andreassen Værøy has been produced for decades according to the same traditional family recipe. With good raw materials and optimal drying conditions, we make hand-cut lutefisk with fine flavour, firm consistency and a delicate appearance. The raw material is selected with particular care during grading, and the balance between lye and water has been refined through experience. Lutefisk is supplied to foodservice and grocery retail in Norway.

Stockfish

At the outer edge of Lofoten, on Værøy, rain, wind, sun and snow create optimal conditions for producing stockfish of the highest quality. Wild-caught skrei is hung on racks during the winter months and dried naturally without additives or preservatives. Once dried, the fish is matured in storage before each fish is graded by quality, size, colour, smell and appearance. Stockfish is primarily an export product, with Italy as our key market.

Origin and craft

A small production environment for discerning customers

Brødrene Andreassen Værøy AS is a family business and producer on Værøy in Lofoten. The closeness to the fishing grounds, clean air and stable coastal climate give us raw material and a production environment few places can match.

We do not make many things. We make stockfish and lutefisk, and we do it with calm, precision and respect for the season. Every fish is dried, matured and graded before it moves on to packing and delivery.

The ambition is clean and refined: wild-caught fish, natural processing, documented origin and craft that stands up to inspection — from Værøy to the finished meal.

Quality certification

Protected Geographical Indication (PGI) Certificate

Stockfish from Lofoten is a unique quality product and was one of the first two Norwegian food products to receive European protected designation (PGI), on par with products such as Parmigiano Reggiano and Balsamico di Modena.

Stockfish from Lofoten received Protected Geographical Indication status in Norway in 2007, and equivalent legal protection in the EU with PGI designation in 2014.
